Scotch Whisky | 31DOVER.com

Whisky - also known as uisge, in Scottish Gaelic - is widely believed to have originated in Scotland, nearly 500 years ago. It is often characterized by its deep amber hue and peat-forward flavour.

Scotch whisky is divided into five distinct categories: single malt Scotch whisky, single grain Scotch whisky, blended malt Scotch whisky, blended grain Scotch whisky, and blended Scotch whisky. However, all Scotch whisky must be aged in oak barrels for at least three years.

The first bit of hard evidence of whisky production actually comes from Scotland, contained within an entry in the Exchequer Rolls for 1494 where malt is sent "To Friar John Cor, by order of the king, to make aqua vitae", enough to make about 500 bottles.

James IV of Scotland (r. 1488–1513) reportedly had a great liking for Scotch whisky, and in 1506 the town of Dundee purchased a large amount of whisky from the Guild of Barber Surgeons

In 1823 The United Kingdom gave Scottish distilleries an option to legalize their operations by paying a fee. This marked the beginning of many well-known scotch brands.
