Papadiablo, meaning “pope and devil”, is produced in Miahuatlan in the highlands of Mexico. Distillers use traditional artisanal methods and four types of agave - Madrecuishe, Bicuishe, Mexicana and Espadin.
The copper still is heated using a log fire making the temperature difficult to control and yet each batch is perfectly sweet, gently salty, with the right vegetal agave flavours and a hint of peat. It’s fabulously complex, extremely sippable and an all round mezcal masterpiece.
