Papadiablo, meaning “pope and devil”, is produced in Miahuatlan in the highlands of Mexico. Distillers use traditional artisanal methods to turn Espadin agave into this mezcal masterpiece.
The copper still is heated using a log fire making the temperature difficult to control and yet each batch is perfectly earthy and fruity. Terrific served by itself, extremely versatile for use in cocktails such as Margaritas, and even over ice with a splash of tonic.
