The surge in popularity of Tiki-themed bars and restaurants in the 1950’s gave rise to the fame of the Mai Tai.

Trader Vic’s restaurant in California and Ernest Raymond Beaumont-Gantt, the owner of a rival bar, both lay claim to being the creator of the Mai Tai in the mid-1940s.

This is a really delicious cocktail. Try one and see for yourself.

Mai Tai ingredients


• 1 fresh lime
• 2 measures Jamaican Rum
• ½ measure Triple Sec
• ¼ measure orgeat (almond) sugar syrup
• ¼ measure rock candy syrup
• Used lime shell, mint sprig & pineapple cube and cherry on stick to garnish

How to serve it

• Halve limes and squeeze juice into a Mai Tai glass fulled of shaved ice.
• Add the rest of the ingredients and enough shaved ice to fill the glass.
• Stir and serve.
• Garnish with lime shell, mint & fruit on a stick.
