Clover Club

Get on down with this classic Clover Club recipe. While it no longer has large amounts of vermouth in it, it is still a great drink to start off your night.

The Clover Club was made famous by the Philadelphia men's club of the same name. While the recipe was originally published in 1917, the drink dates from around 1910. Creamy, slightly tart but complex are a few words used to describe this concoction. Part of what makes this drink a little more advanced is the use of the egg white, which serves as an emulsifier. While some shy away from the use of raw egg, it provides a slightly creamier feel to the drink whilst also providing a head.

Clover Club


  • Cocktail glass
  • 1 double shot of Edinburgh Gin raspberry liqueur
  • 1 tablespoon of lemon juice
  • 1 egg white
  • A cocktail shaker
  • Ice

How to serve it

  • Pour the ingredients into the cocktail shaker without the ice and shake hard.
  • Pour in the ice and shake again.
  • Strain into the cocktail glass and serve.

Dry shaking the ingredients provides the head and emulsifies them into a smooth drink. You can add a raspberry syrup to this Clover Club recipe and use it with Hendrick's gin, or you can use a plain gin and add grenadine or redcurrant syrup to create a sweeter or tarter drink as needed.
