The Ultimate List of Summer Cocktails

Ah summer. When hot days call for the coolest of cocktails. From classic creations with a twist, to super-simple sunshine tipples - we present a whole host of refreshing recipes that are easy to make at home. So bookmark this page, get the drinks in, and get creative!

THE PALOMA

Forget margaritas, in Mexico The Paloma is king and it’s a super-refreshing alternative to beat the heat. Sweet, sour, a little bitter, and a little salty; it’s got all four taste groups. There are a few ways to make it, but to mix one up at home we find the below the easiest recipe to follow.

INGREDIENTS:
- 50ml Blanco Tequila
- Juice of 1/2 a lime
- Pinch of salt
- 5 dashes of Grapefruit Bitters
- Soda

METHOD:
In a rocks or highball glass, add the tequila, lime juice, bitters and stir. Add the salt, build with cubed ice and top with Soda. Stir again, add more ice if needed and garnish with a grapefruit slice and sprig of rosemary, or lime wheel.

DARK 'N' STORMY

The Bermudans know a thing or two about rum. And sunshine. And drinking rum in the sunshine. One of the simplest, yet tastiest cocktails, a Dark 'N' Stormy's only demand is that the spirit is added AFTER the mixer. Read more about how the cocktail got it's name.

- 50ml Dark Rum
- 100ml Ginger Beer
- Lime wedge
- (optional: squeeze of lime)

METHOD:
Fill a tall glass with ice cubes, then fill 3/4 of the glass with Ginger Beer (the stormy). Top up gently with Dark Rum (add a touch of the overproof one for an extra kick) to create a dark cloud of Rum at the top. Garnish with fresh lime - adding a squeeze to the cocktail, should you wish.

LIMONCELLO COLLINS

There are three months of the year where it's deemed totally appropriate to bring a taste of Italy to the UK: Aperol spritz in the sunshine, way too many olives for aperitivo hour and ending every meal with a limoncello. The latter, a zesty little liqueur, is also a great addition to give a summery twist to the classic Tom Collins cocktail.

INGREDIENTS:
- 50ml Limoncello
- 35ml Gin
- 25ml Freshly Squuezed lemon juice
- Soda

METHOD:
Add the limoncello, gin and lemon juice to a rocks glass and stir. Fill with cubed ice and lemon wheels and stir again. Top with soda and a sprig of mint.

THE ELDERFASHIONED

Summer comes and whiskey often puts on a fruity little jacket. But for a cocktail that doesn't mask the whiskey's notes with the likes of juice and muddled fruit, and is simply a "build and stir" method, the Elderfashioned makes a great choice - giving a nod to tradition and with the right balance of sweetness.

- 2 dashes Angostura bitters
- 25ml Elderflower Liqueur
- 50ml American Whiskey
- Soda
- Orange peel to garnish

Method:
Add all the ingredients to an highball glass, except soda, and fill with ice. Stir, garnish with an orange peel and add soda to top.

THE ALABAMA SLAMMER

The sweet mix of SoCo, sloe gin, amaretto and orange juice hasn't quite reached the same heights of popularity in the UK as it enjoys stateside. But given how easy it is to make, and the fact it's brilliant to make in batches, this is sure to satisfy the sweet tooth at summer parties.

- 25ml Sloe Gin
- 25ml Southern Comfort
- 25ml Amaretto Liqueur
- 25ml Orange Juice
- Slice of Orange

Method:
Fill a shaker with ice. Add the Sloe Gin, Southern Comfort, Amaretto and orange juice. Shake until cold. Strain into a glass filled with ice. Garnish with an orange slice.

ENGLISH COUNTRY GARDEN

The English Country Garden cocktail combines the best of British produce - cucumber, apples, and of course, Gin(!) to create a crisp, refreshing concoction that makes a delightful aperitif for those long, warm evenings.

- 25ml Hendrick’s Gin
- 50ml Apple Juice
- 20ml Lime Juice
- 20ml Sugar Syrup
- Mint and cucumber to garnish

Method:
Fill a shaker with ice. Add the gin, apple juice, lime juice and sugar syrup to the shaker and shake until cold. Using a cocktail strainer, strain the mixture into a glass filled with fresh cubed ice. Garnish with a slice of cucumber and mint leaf.
