Amongst the Mojitos, Manhattans and skinny vodka sodas, sometimes you just can’t beat a good classic G&T. And while it’s super exciting that we’re seeing so many great bottles come out in both the gin AND tonic worlds, it can get a little tricky to decipher between them all. The choice paradox is real, and when you’re picking our a brand-new gin for the home bar, it helps to make an informed choice, both about the ideal tonic pairing, and the gin itself.
So, to help with this, I’ve put together a list of the top 10 coolest, most popular gins we’ve seen on 31DOVER this year. I’ve also added a tonic suggestion for each - because let’s face it, nobody fancies a last minute trip to the corner shop in THIS rain…
However you’re drinking yours, make sure to add plenty of cubed ice and a slice of lemon, lime, or whatever takes your fancy. Got a favourite already? We’re all ears (/eyes) - let us know in the comments!
This is the first release from master distiller Lesley Gracie’s Cabinet of Curiosities, which contains a range of ginny concoctions that normally don’t make it out to the real world. Hendrick’s enchanting small-batch, limited-edition absolutely flew off the shelves this summer, thanks to its deeply floral flavour and striking design.
From Stockholm’s first craft distillery comes Stockholms Bränneri, made by Calle and Anna Wikner, an achingly cool Nordic couple who originally created the gin to be served at their wedding. This was one of our most successful Gin Club bottles to date - it was highly praised by members for its clean, uniquely herbal palate.

Last autumn, Chase’s Apple & Rhubarb Gin sold like hot cakes. This subtly-sweet and seriously smooth spirit effortlessly takes your pink gin into Autumn, thanks to its sweet rhubarb and tangy apple flavours, as well as hints of warming cinnamon.

”About a year ago, I tried Aviation for the first time. Since that day, I’ve spent my time finding some way to infiltrate the company. I did this for one simple reason: It’s the best damn gin on the planet” - Ryan Reynolds, Owner. Hear, hear. Earthy and spicy, this will take your G&T to new heights.
PAIR WITH: Fever Tree Elderflower Tonic
It’s been a bestseller this year - and one glance at the bottle will tell you why. With a recipe as captivating as its bottle, Mermaid Gin uses foraged botanicals from the Isle of Wight, including Boadicea hops and Rock Samphire, for an expressive, lingering flavour.

One for the minimalist, Death’s Door Gin is a simple combination of three botanicals: full-flavoured juniper, citrus-y coriander and soft, cooling fennel. Combine with an equally fuss-free tonic and let the flavours shine!

Blue as the brightest cornflowers, the strikingly beautiful Blue Bottle Gin is made in Three Fingers Distillery on the small island of Guernsey. As well as juniper, you’ll discover fun tropical flavours of local gorse flower, balanced with sweet nutmeg and savoury cubeb pepper. PAIR WITH: London Essence Grapefruit & Rosemary Tonic
It’s not Sipsmith’s…it’s mine. If you’re like me and aren’t too keen on bold ginny flavours, this one is light on the juniper and heavy on fragrant, fruity chocolate orange goodness. Trust me, this one tastes as good as it looks.
PAIR WITH: Double Dutch Indian Tonic
The epitome of Japanese Craft, Roku Gin is a stunning combination of six native botanicals, including sencha tea, sakura leaf and yuzu peel. Its distinctive flavour profile will take you on a tour of the Japanese seasons, but the gin is also highly praised for its consistent clean palate, making it perfect sipped neat or with a simple Indian tonic.
PAIR WITH: Double Dutch Indian Tonic
I thought I’d round off this list something a little different. This beautiful small-batch gin is a blend of six botanicals, including cherry for a gloriously full, fruity flavour. It’s sweet, yes - but not super sweet, thanks to the authentic presence of classic cubeb and cardamom for a moreish, balanced mouthfeel.
PAIR WITH: Thomas Henry Cherry Blossom Tonic
