Introducing Dead Rabbit Irish Whiskey...

What do you do when your phenomenally successful bar, The Dead Rabbit, is approaching its fifth birthday, has been awarded World’s Best Bar for two years running and you're recognised for your creative talents worldwide? You launch your own spirit of course.

And in the case of Sean Muldoon and Jack McGarry, the Northern Irish gents behind the multi-award-winning New York-based Irish bar - which is home to the largest collection of Irish whiskey in North America - that brand should embody the spirit of Ireland and the spirit of your bar. Step forward, Dead Rabbit Irish Whiskey.

Sean & JackThe Dead Rabbit Grocery & Grog was named for the notorious Irish immigrant street gang, lead by bare-knuckle boxer John Morrissey (a notorious figure who would later go on to become a Democratic congressman and senator), that dominated the New York streets in the mid to late 1800s. If you enjoy a cocktail and have visited the big apple, chances are you'll be familiar with what is possibly the world's most famous Irish bar and maybe visited it for an Irish Coffee or two.

Opened by Sean & Jack in 2013, the two met at iconic Irish bar, The Merchant Hotel, and after driving that to win World's Best Cocktail Bar in 2010, with the support and backing of a former patron, the duo skipped (or is that hopped?) across the pond to open The Dead Rabbit, a bar which fuses top-shelf liquor and cocktail culture with a traditional Irish pub. The bar they created redefined modern hospitality and its award-shelf must be close to buckling under the weight of the many prestigious industry recognitions it's achieved since.

The next natural step for this now-iconic brand is its own Irish Whiskey to add to its collection - and for this, they team up with one of Ireland's leading experts on the spirit, and Master Distiller for The Dublin Liberties Whiskey Company, Darryl McNally. Darryl has over 20 years in the Irish whiskey industry, and 17 at Ireland's oldest distillery and Dublin's traditional home of distilling - The Dublin Liberties Distillery. The building is over 400 years old and, believe it or not, was once a tannery where rabbit fur was processed.

Dead Rabbit Irish Whiskey, already a cult hit with global bartenders, is a five-year-old blend of Irish single malt and grain whiskeys, uniquely aged in seasoned bourbon casks and finished in specially crafted, small virgin American oak barrels - resulting in a flavour profile that is unlike any other Irish whiskey available today, and served with a measure of attitude. On the nose, it is light and aromatic, with toasted oak notes and a hint of caramel, while the palate has a deep rich mellow feel, finishing with a long soft hint of vanilla.

This is definitely one for the collection, not only that of the whiskey lover but for cocktail fans all round.  Sláinte!
