14 Valentine's Day Cocktails You'll Love

Dim the lights. Snuggle up with the one you love. And sip on one of these 14 Valentine's Day Cocktails to guarantee a delicious night in a deux:

1.The Rosé Royale

Ingredients:
35ml Belsazar rosé vermouth
15ml fresh grapefruit juice
15ml sugar syrup
1 egg white
100ml Champagne

Method:
Pour the rosé vermouth, grapefruit juice, sugar syrup, and egg white into a shaker full of ice. Shake vigorously for a good 10-15 seconds until it’s fully iced. Strain and pour into a coupe glass top with Champagne. Decorate with edible florals or a slice of fresh grapefruit.

2. The Mexican Rose

Ingredients:
25ml Jose Cuervo Especial
35ml Lanique Rose Liqueur
25ml Cloudy Apple Juice
25ml Lime juice
2 sage leaves

Method:
Shake all the ingredients with ice and double into a coupe glass.
Add a lime twist or sage leaf to garnish.

3. The Chambord Chocolate Martini

Ingredients:
20g high quality chocolate
2 tablespoons of coconut cream
30ml Chambord
30ml Absolut vanilia vodka
Garnish:  Desiccated coconut and lime wedge for rim
3 fresh raspberries on a cocktail pick

Method:
Gently warm coconut cream and chocolate together in a small pan to melt into a smooth rich mixture. Cool to room temperature.
Rub a wedge of lime around half the rim of the glass. Pile desiccated coconut onto a small plate then dip the glass upside down into coconut
Add the Chambord, vodka and chocolate mixture to cocktail shaker with ice cubes. Shake to chill. Strain into martini glass with coconut rim. Garnish.

4. Between The Sheets

Ingredients:
25ml  XO Cognac
25ml Cointreau
25ml white rum
15ml (1tbsp) lemon juice
Lemon peel twist, to serve

Method:
Add all ingredients to a cocktail shaker. Add ice and shake until chilled.
Strain into a chilled coupe or cocktail glass. Garnish with a citrus twist.

5. Romeo & Juliet

Ingredients:
50ml Patron Silver tequila
15ml Grand Marnier
10ml FAIR Goji Berry Liqueur
75ml chilled peach juice
3 maraschino cherries and an orange spiral to garnish

Method:
Fill a cocktail shaker with ice; add the tequila, Grand Marnier, Goji Berry Liqueur and peach juice. Shake vigorously for 10 seconds and pour into a chilled fluted glass or large martini glass. Skewer three cherries on a swizzle stick and lay across the lip. Place orange spiral on the lip of the glass so it drapes down beside it.

Ingredients:
45ml Bacardi 8 year old rum
35ml Belsazar Red vermouth
Dash of Angostura bitters
Orange peel to garnish

Method:
Brown, bitter and served with a twist, this is a beautifully simple yet sophisticated drink — a rum-based Manhattan, if you will. Fill a cocktail shaker with ice. Pour in the rum, red vermouth and a dash of orange bitters. Stir, stir, stir. Strain into a chilled glass and garnish with a twist of orange peel.

7. White Sand

Ingredients:
75ml Prosecco
30ml Cachaca
1 scoop lemon sorbet
1 fresh mint leaf to garnish

Method:
Add lemon sorbet to a tall chilled fluted glass and pour in Cachaca and Prosecco.
Stir gently and garnish with fresh mint

8. La vie en Rose

Ingredients:
1 Sugar cube
2 dashes Peychaud's bitters
20ml elderflower liqueur
Brut sparkling wine
Orchid blossom to garnish

Method:
Place sugar cube in a cocktail glass. Add bitters (for the red hue) and elderflower liqueur (for floral sweetness). Top with sparkling wine for a crisp, tickling finish and garnish with orchid flower if desired.

9. Drink Pink

Ingredients:
1 Sugar cube
3 dashes Angostura Bitters
25ml French Brandy
Rosé Champagne to top

Method:
In the bottom of a Champagne flute or coupe, soak a sugar cube with a good few dashes of Angostura bitters. Pour in 25ml of good French brandy and top up with pink Champagne.

10. The Love 75

Ingredients:
50ml gin
15ml honey brandy liqueur
15ml freshly squeezed lemon juice from 1 lemon
10ml simple syrup (see note below to make your own)
Sparkling rosé wine to top
Lemon peel for garnish

Method:
Fill a mixing glass with ice. Add gin, brandy liqueur, lemon juice, simple syrup, and lemon bitters. Stir until chilled, for about 20 seconds. Strain into a Champagne flute and top with chilled sparkling rosé. Zest lemon peel over the drink and add peel to the glass as a garnish.

To make your own simple syrup, combine 1 cup of water with 1 cup of sugar in a small saucepan and heat over medium heat, stirring constantly, until sugar is dissolved. Cool before using. Simple syrup will keep in a sealed container in the refrigerator for up to 5 days.

11. The Bee's Knees

Ingredients:
50ml gin
1 tablespoon honey
1 tablespoon freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice
1 lemon twist, for garnish

Method:
Combine the honey, gin, and citrus juices in a cocktail shaker.
Whilst dry, stir well to incorporate the thick honey with the other liquids.
Add ice and then shake for 30 seconds. Strain into a chilled coupe, garnish with a lemon twist, and enjoy!

12. French Kiss

30ml Gin
20ml St. Germain
10ml Aperol
10ml Fresh lemon juice
Top with sparkling rosé
Garnish with orange twist

Method: 
Shake first four ingredients with ice and strain into a coupe glass. Top with Martini sparkling rosé and garnish with an orange twist.

13. Cupid's Cup

50ml Vodka
25ml St. Germain
10ml Fresh lemon juice
5ml Simple syrup
3 muddled strawberries
Top with Martini sparkling rosé
Garnish with a strawberry

Method:
Shake first 5 ingredients with ice and strain into a mason or highball glass filled with ice.
Top with Martini sparkling rosé and garnish.
