Dim the lights. Snuggle up with the one you love. And sip on one of these 14 Valentine's Day Cocktails to guarantee a delicious night in a deux:

1.The Rosé Royale

35ml Belsazar rosé vermouth
15ml fresh grapefruit juice
15ml sugar syrup
1 egg white
100ml Champagne

Pour the rosé vermouth, grapefruit juice, sugar syrup, and egg white into a shaker full of ice. Shake vigorously for a good 10-15 seconds until it’s fully iced. Strain and pour into a coupe glass top with Champagne. Decorate with edible florals or a slice of fresh grapefruit.

2. Grapefruit Tequila Mojito

40ml Gran Centenario Tequila
35ml Grapefruit juice
35ml Simple syrup
Soda water
Mint leaves

Place 6 to 10 fresh mint leaves in a sturdy glass. Squeeze in juice from 1 lime, and use a muddler to gently crush the mint. Stir in the grapefruit juice,  simple syrup and tequila - strain if desired. Add a cube of ice and top up with soda. Garnish the glass with a mint spring and a lime wedge.

3. Love Buzz

20ml Mozart Chocolate Liqueur
30ml Raspberry Puree
30ml Espresso coffee
Garnish:  3 fresh raspberries on a cocktail pick

In a cocktail shaker filled with ice, add Absolut, Mozart, raspberry puree, and room-temperature espresso. Shake all ingredients and strain into a cocktail glass. Garnish with some fresh raspberries.

25ml Cointreau
25ml white rum
15ml (1tbsp) lemon juice
Lemon peel twist, to serve

Add all ingredients to a cocktail shaker. Add ice and shake until chilled.
Strain into a chilled coupe or cocktail glass. Garnish with a citrus twist.

5. Romeo & Juliet

50ml Ocho Blanco Tequila
15ml Grand Marnier
10ml Chambord
75ml chilled peach juice
3 maraschino cherries and an orange spiral to garnish

Fill a cocktail shaker with ice; add the tequila, Grand Marnier, Chambord and peach juice. Shake vigorously for 10 seconds and pour into a chilled fluted glass or large martini glass. Skewer three cherries on a swizzle stick and lay across the lip. Place orange spiral on the lip of the glass so it drapes down beside it.

6. The Palmetto

45ml Neptune Rum
35ml Belsazar Red vermouth
Dash of Bitters
Orange peel to garnish

Brown, bitter and served with a twist, this is a beautifully simple yet sophisticated drink — a rum-based Manhattan, if you will. Fill a cocktail shaker with ice. Pour in the rum, red vermouth and a dash of orange bitters. Stir, stir, stir. Strain into a chilled glass and garnish with a twist of orange peel.

7. White Sand

75ml Prosecco
30ml Cachaca
1 scoop lemon sorbet
1 fresh mint leaf to garnish

Add lemon sorbet to a tall chilled fluted glass and pour in Cachaca and Prosecco.
Stir gently and garnish with fresh mint

8. La vie en Rose

1 Sugar cube
2 dashes Bitters
20ml elderflower liqueur
Brut sparkling wine
Orchid blossom to garnish

Place sugar cube in a cocktail glass. Add bitters (for the red hue) and elderflower liqueur (for floral sweetness). Top with sparkling wine for a crisp, tickling finish and garnish with orchid flower if desired.

9. Berry Kiss Milkshake

40ml Milk
1 scoop Strawberry Ice Cream
40ml Vodka
20ml Baileys

In a blender, add a cup of whole milk, a generous scoop of strawberry ice cream, Vodka, and Baileys Irish Cream. Blend and serve, topped with 1 additional scoop of ice cream (because why not?!). Garnish with chocolate dipped strawberries.

10. The Love 75

50ml gin
15ml honey brandy liqueur
15ml freshly squeezed lemon juice from 1 lemon
10ml simple syrup (see note below to make your own)
Sparkling rosé wine to top
Lemon peel for garnish

Fill a mixing glass with ice. Add gin, brandy liqueur, lemon juice, simple syrup, and lemon bitters. Stir until chilled, for about 20 seconds. Strain into a Champagne flute and top with chilled sparkling rosé. Zest lemon peel over the drink and add peel to the glass as a garnish.

To make your own simple syrup, combine 1 cup of water with 1 cup of sugar in a small saucepan and heat over medium heat, stirring constantly, until sugar is dissolved. Cool before using. Simple syrup will keep in a sealed container in the refrigerator for up to 5 days.

11. The Bee's Knees

1 tablespoon honey
1 tablespoon freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice
1 lemon twist, for garnish

Combine the honey, gin, and citrus juices in a cocktail shaker.
Whilst dry, stir well to incorporate the thick honey with the other liquids.
Add ice and then shake for 30 seconds. Strain into a chilled coupe, garnish with a lemon twist, and enjoy!

12. French Kiss

20ml St. Germain
10ml Aperol
10ml Fresh lemon juice
Top with sparkling rosé
Garnish with orange twist

Shake first four ingredients with ice and strain into a coupe glass. Top with Martini sparkling rosé and garnish with an orange twist.

13. Cupid's Cup

10ml Fresh lemon juice
5ml Simple syrup
3 muddled strawberries
Top with Martini sparkling rosé
Garnish with a strawberry

Shake first 5 ingredients with ice and strain into a mason or highball glass filled with ice.
Top with Martini sparkling rosé and garnish.
