White rum is an exceptionally versatile spirit. Dry, light-bodied, light in colour and lightly sweet in flavour, it is produced from sugarcane juice and molasses, and normally has a very short distillation period.
Not often drunk neat, it is instead the party starter: the spirit of choice in some of the world’s most-famous and most-loved drinks including the Mojito, the Daiquiri, the Piña Colada and the simple Cuba Libre (rum and coke with lime).
With some white rums bottled straight off the still, the white rum category features the youngest rum expressions. However, some white rums may have either been aged in stainless steel vats (retaining their white colouring) or are aged rums that have then been carefully filtered to remove some of the elements given by the maturation process. This type of white rum is often a premium expression and can be as clean and clear as a vodka.
There is therefore a whole spectrum of white rums beyond the common cocktail component. Crisp, light and with notes of grass or light sweetness, white rum is generally the cheapest expression (without maturation there is no evaporation and loss of liquid). Mild and lighter-bodied, white rum is the go-to spirit for a multitude of common mixed drinks and gives a sweet, uplifting kick to many a cocktail.
