The Bellini was created by Giuseppe Cipriani, the founder of Harry’s Bar in Venice and named after the 15th century Venetian artist Giovanni Bellini. Classically made with Prosecco, the cocktail is now more commonly made with Champagne.

Refreshing and oh so simple, the Bellini reminds me of glorious summer evenings gone by.




How to serve it

  • In a mixing glass add puréed white peaches, top up with Champagne and stir.
  • Fine strain into a chilled Champagne flute. 
  • Garnish with a fresh slice of peach.
