Piña Colada Fiesta!

Yes this is a party in a post, to celebrate the one and only piña colada cocktail...

Retro cocktails are in! But who cares, because the piña colada never really went out. That lip-smacking combo of zingy pineapple and luxurious coconut (and plenty of White Rum) will always be a classic. We've also got some new ideas for piña colada inspired shots and infusions. Let's celebrate - it's Piña Colada day on 10th July!

The Classic

60ml White Rum - we used a new flavoursome craft one from NYC, Owney's - ideal.
60ml Coconut cream
120ml Pineapple juice
Optional fresh pineapple and maraschino cherries to garnish. Maybe a kitsch cocktail umbrella or two and a couple of straws. C'mon it's a party!


Pour the White Rum over a few cubes of ice in a cocktail shaker (we used an ex-coffee jar). Add the coconut and pineapple, and shake. Pour into your chosen glass and garnish. So. Easy.

The Piña Colada Tequila Shot

I've previously recommended a Cîroc Pineapple and Cîroc Coconut mix, to make up a boozy piña colada flavoured shot. But I didn't have Cîroc Coconut to hand yesterday. Among the wide range of bottles on my desk was Cîroc Pineapple and one of my favourite new drinks, 1800 Coconut Tequila. I gave it a 'shot'. It is bangin! Everyone in the office loves it (apart from Logistics Chris who only likes Talisker and Lager). Then I added pineapple chunks to some shots; a bit of coconut cream to the others. I'm copyrighting all varieties of shot with Cîroc Pineapple and 1800 Coconut Tequila as the base spirits, right here, right now: © © © © © © ©!!! K?

1800 Coconut Tequila
Optional fresh pineapple and coconut cream.


Pour equal amounts of the Vodka and Tequila into shot glasses, and serve. For extra piña colada fun, plop in a piece of pineapple or stir in some coconut cream - or both.

Fresh, ripe pineapple chunks
Rum - whichever style you prefer. We used The Duppy Share - an aged blend.


Put the pineapple in the Rum or pour the Rum over the pineapple. Either way it should be in a sealable glass container. Not plastic. Leave for a few days to infuse. Strain and chill, or chill and strain, and serve just as it is over ice, for a highly sophisticated and grown-up PC-flavoured drink. Mix in a little coconut cream if you fancy it.
