Céline Rousseau, Winemaker
Meet Céline Rousseau, award-winning French winemaker producing Australian wines for Chalkers Crossing.
WHAT ARE YOU UP TO AT THE MOMENT?
At the moment, I'm preparing the winery for the 2015 vintage that will start in four weeks time. I also am spending a lot of time at our Hilltops and Tumbarumba vineyards doing crop estimates and assessing the quality of our grapes.
As well as that, I'm spending a bit of time on the road with the sales representatives of our Australian distributor in Sydney and Canberra, and I'm trying to set up another distribution in Victoria.
I'm also focusing on entering our wines into the US market for 2015.
Personally, I am looking forward to three or four days sailing with friends, North of Sydney at Pittwater at the beginning of February, and I'm enjoying weekly summer sailing regattas in Sydney harbour, on my 27ft sailing boat.
GET HOME, FEET UP, WHAT'S IN YOUR GLASS?
In summer, a glass of Chardonnay, either our Chalkers Crossing Tumbarumba Chardonnay or our CC2 Hilltops Chardonnay.
IF YOU WERE A DRINK WHAT WOULD YOU BE AND WHY?
I would be a good wine, probably a glass of Romanée Conti, because it is subtle, spicy and full of flavours without being too powerful. The perfect glass of Pinot Noir.
YOU CAN CHOOSE ANYONE TO TAKE A SEAT NEXT TO YOU AT THE BAR - WHO IS IT AND HOW WOULD THE NIGHT GO?
Someone I can professionally learn from such as Armand Rousseau or Jancis Robinson. The night will be dedicated to the tasting of exceptional wines from all over the world and of course Gevrey-Chambertin from Armand Rousseau.
SHAKEN OR STIRRED?
FINALLY, WHO WOULD YOU RAISE A GLASS TO AND WHY?
Right now, I don't want to be too political, but it would be to raise a glass to the solidarity of the French people and to our republican values.
